Panaeng Moo is a kind of curry but it has less water than other curries. Its water is very thick with coconut cream. Original Panaeng Moo has only curry sauce and pork but nowadays some people add pea eggplants or other kind of vegetables. It can also be made with chicken, beef or even fish and shrimps.
Ingredients:
400 grams pork, sliced thinly
½ cup coconut milk
2 tablespoons panaeng curry paste
2 tablespoons fish sauce
1 tablespoon palm sugar
2 tablespoons vegetable oil
5 kaffir lime leaves, finely slice
15 sweet basil leaves
2 red chilies, sliced lengthwise
Cooking Instructions:
1. Heat the oil in a pan over medium heat and add the panaeng curry paste and stir for one minute. Then add the coconut milk, stir and cook until the oil appears on top.
2. Add coconut milk, bring to a boil then add pork stir and season with fish sauce and palm sugar to taste.
3. When the pork is cooked add sweet basil, kaffir lime leaves and chili and stir.
4. Remove from the heat.Transfer to a serving dish, serve with hot rice.
