Gaeng Gai Sai Nor Mai (Red Curry With Bamboo Shoot And Chicken)



Gaeng Gai Sai Nor Mai can be made with or without coconut. This recipe we do is without coconut milk. It has
a little hot and spicy taste. If you like spicy you can add more red curry paste or fresh chilies. The most important thing of cooking curry dishes is frying the curry paste in oil. You should use low or medium heat and often stir the red curry paste until it’s fragrant. Then add fish sauce and simmer it until oil appears on top. If you make this part well you will be amazed of its taste.



 

Ingredients:

1 cup chicken wings or breast, cut or sliced into small pieces

1 cup bamboo shoot

2 tablespoons red curry paste

2 tablespoons fish sauce

1 cup basil leaves

2 tablespoons vegetable oil

2 red chilies, sliced into half lengthwise

2 cups water
 
 
Cooking Instructions:

1.Wash chicken and slice into small pieces. Set aside.

2.Wash all vegetables including bamboo shoot.

3.In a wok, heat the oil until it's hot over low heat. Add the red curry paste and stir often until it’s fragrant. Then add one tablespoon fish sauce, simmer it until oil appears on top.

4.Put chicken in the wok. Fry it for 2 minutes then add water and simmer it for5-8 minutes.

5.While it’s boiling, add bamboo shoot. Cook it for 3 minutes.

6.Add red chilies and basil leaves. Stir and remove from the heat.

7.Transfer in a serving bowl. Serve with rice
