Khao Niao Piak Lamyai (Sweet Sticky Rice And Longan In Coconut Milk)
Ingredients:
1 cup uncooked sticky rice
1 cup coconut milk
1 cup sugar
1 cup longan without seeds, can be canned or fresh longan
2 cups water
¼ cup boiled corn, sliced
1 teaspoon salt
Cooking Instructions:
1. Select the uncooked sticky rice, discard bad seeds and stones and drain twice. Soak the sticky rice in water about 3 hours.Drain the water off.
2. Put in the soaked sticky rice in a pot and pour in water and cook it over medium heat for
10 minutes or until the sticky rice cooked. Regularly stir.
3. Add the sugar and ¾ salt, stir it.When the sugar is dissolved, add longan and sliced corn. Reduce the heat to low and simmer it for 3minutes or until it dry. Remove from the heat.
4. Now make the topping, boil the coconut cream in a pot over medium heat for 2 minutes then add ¼ salt in the pot. Stir it.
5. Transfer the mixed sticky rice in to a serving bowl and top with some of salted coconut cream. Serve hot.
