Yam Tua Plu (Wing Beans Shrimps Salad)


This is a different kind of salad.I’m not sure if it’s called Salad. It’s made from Thai winged beans and we do add some coconut milk and pounded peanut. It doesn’t taste as sharp as other types of salad but it has soft and smooth taste from coconut milk and peanut.It’s not spicy or too sour.






 

Ingredients:

½ cup shrimps

½ cup minced pork

½ cup peanut

7wing beans

¼ cup chopped coriander

¼ cup chopped spring onion

3 cloves of garlic

3 Thai peppers

1 teaspoon chili powder

4 tablespoons coconut milk

2 teaspoons shredded coconut

2 tablespoons lemon juice

1 tablespoon fish sauce

1 teaspoon salt

1 teaspoon sugar

½ cup water

 
Preparations:

 1. Wash shrimps, pork and all vegetables

2.Fry peanut in a dry pan until it’s slightly browned when it dries take off skin and chop or pounded in a mortar and set aside.

2.Fry the shredded coconut in a dry pan for half minute or until it turns slightly browned and set aside.

3.Cook half of the water when it’s hot add the shrimps and cook for 1 minute.Chop them into small pieces and set aside.

4.Chop all vegetables into finely small pieces and set aside.

 
Cooking Instructions:

1.Boil the rest of water then add salt and chopped garlic.

2.Add the pork and shrimps into the pan stir cook for 1 minute at medium high.

3.Add all vegetables including pounded peanuts and coconut milk into the pan and mix all the ingredients well.

4.Mix lemon juice, fish sauce, sugar, Thai peppers and chili powder in the pan.

5.Before serving pour dried shredded coconut over the top.
