Tom Jued Nong Gai Fug (Clear Soup With Chicken Drumsticks And Winter Lemon)
This clear soup is good for children or someone who doesn’t like spicy food. Chicken and winter melon need to be soften.It’s tastier when you eat it while it’s hot.
Ingredients:
500 grams chicken drumsticks
300 grams winter melon, cut into small pieces
1 tablespoons light soy sauce
¼ teaspoon white pepper
¼ teaspoon salt
100 grams shiitake mushrooms
2 stalks spring onions, chopped
1 stalk coriander, chopped
2 cloves garlic, chopped
2 cubes of Knorr instant pork stock(optional)
5 cups water
Preparation:
1. Wash all vegetables and chicken drumsticks then dried pat.
2. Cut off the roots of coriander and spring union and chop.
3. Chop the garlic.
4. Cut off the dirt from the bottom stem of shiitake mushrooms.
5. Peel skin of the winter melon and cut them across then cut those pieces lengthwise about 2” wide. Cut them across into 2” pieces and cut off seeds and the white fluff part.
Cooking instructions:
1. Boil water in a pot on high heat.Add chicken drumsticks, Knorr instant pork stock, white pepper, garlic, light soy sauce and salt in the pot. Cook for 3 minutes.
2. Reduce the heat to low, add winter melon and shiitake mushrooms, and simmer the soup for 5 minutes.
3. When the winter melon get soft add coriander and spring onion, stir and remove from the heat.
4. Transfer in a serving bowl and serve immediately with rice.
Tips:
Mark plus sign on the shiitake mushroom caps.
You can add the root of coriander that you cut off in the soup while you boil the water and remove it before serving.
If you add knorr instant pork stock you have to add only 1 teaspoon of light soy sauce or just skip it.
