Tom Jued Kai is similar to all other clear soups. It just have another kind of taste. You can add other vegetables like cabbage, carrot or just without vegetable.
Ingredients:
3 large eggs
½ teaspoon white pepper
1 teaspoon light soy sauce
2 stalks spring onion, chopped
3 cloves garlic, chopped
1 teaspoon fish sauce
2 cubes Knorr instant pork stock(optional)
1 cup vegetable oil
4 cups water
Preparation:
1. Wash spring onion and chop it.
2. Chop the garlic.
Cooking instructions:
1. In a mixing bowl, beat eggs then season with light soy sauce, fish sauce and white pepper. Stir all ingredients until mix thoroughly. Set aside.
2. Heat oil in a wok on medium high heat,when oil is hot, pour the mixture into the wok and let it cooks without stirring. Once the omelet is cooked on one side, turn it over using two spatulas and cook the other side until done.
3. Remove it from heat, cut the omelet into small pieces and put on a plate. Set aside.
4. Combine water and Knorr instant pork stock in a medium size pot over high heat, bring it to boil.
5. Add the omelet and cabbage in the pot. Let it simmer for about 3 minutes.
6. Add spring onion, stir and remove from the stove. Put the soup into a bowl and serve immediately with hot rice.
