Khao Pad Goong (Fried Rice With Shrimps)


The classic fried rice is fried rice with pork but fried rice with shrimps is also well known. And it's the favorite dish of many people.It has the same basic ingredients as fired rice with pork you only add shrimps instead of pork. I love to add cauliflower and carrots. It doesn’t make it tastier but I just love vegetables.




 

Ingredients:

2 cups cooked jasmine rice

200 grams shrimps

100 grams kale

2 cucumbers

1 tomato

1 onion

2 eggs

1 tablespoon chopped garlic

1 teaspoon fish sauce

1 teaspoon thin soy sauce

½ teaspoon sugar

2 tablespoons vegetable oil

 
Preparation:

1. Wash all vegetables.

2. Wash shrimps, peel off the shell and deveined. 

3. Thinly slice cucumbers, onion, and tomato.

4.Cut off the old leaves and peel at the stem of kale. Then slice the stem and cut the leaves about 1” length.

 
Cooking instructions:

1. Heat a large wok over high heat then pour the oil in the wok. When the oil is hot break the eggs into the wok and mix it. Stir-fry for 1 minute.

3. Add the shrimps and stir-fry for about 1 minute. Then add garlic and stir-fry for another minute.

4. Add the rice. Stir-fry it for about 4 minutes keep moving the rice so the rice doesn’t stick the wok. Add the kale, onion, tomato and all seasoning ingredients. Stir-fry for 1 minute.

5. Remove and put on a plate. Serve with sliced cucumbers or a piece of slice lemon.

 
Tips:

Thai people like to eat fried rice with fish sauce with hot chili and a bit lemon juice. It’s very easy making it. You need 2 chilies, 1 teaspoon lemon juice and 1 tablespoon fish sauce. Remove the stems from the chilies and mince into very small pieces. Place the chilies in a small bowl and add fish sauce and lemon juice.

To keep the chili fresh and avoid to turn black just add a few drops lemon juice into the fish sauce with hot chilies. I’m the one who don’t like to squeeze the lemon all over fried rice it’s too sour if you don’t mix it well but I like to add lemon juice into the fish sauce with hot chilies.

When you break the eggs into the wok please make sure the oil is hot enough and try not to mix the white of the eggs and the yolks. Just roughly stir-fry for few times because the white and the yellow will make the fried rice more colorful.

Fried rice is an oily food. Therefore spice from chili and lemon juice make the taste much better and not too oily. You also can fried it in butter instead of oil and use salt instead of fish sauce too.

You also can use other vegetables instead of kale like broccoli or cauliflower but keep the main vegetables like tomato and onion. I sometimes add carrot as well.

The original fried rice, we use to eat fried rice with sliced cucumbers and fresh spring onions but some people don’t like especially children and me.
