Hed Pad Namman Hoy Goong (Stir-Fried Straw Mushroom With Shrimps In Oyster Sauce)
If you are a vegetarian you adapt this dish to use only vegetables and oyster sauce. “Hed Pad Namman Hoy Goong” it’s similar to Chinese style. You can use kale, asparagus or other kind of mushrooms for this dish. I like only fried vegetables with oyster sauce without any meat but I’m not vegetarian…
Ingredients:
300 grams shrimps
500 grams straw mushrooms
1tablespoon chopped garlic
3tablespoons oyster sauce
1tablespoon fish sauce
1 teaspoon sugar
½ teaspoon ground pepper
2tablespoons vegetable oil
Preparation:
1. Wash the shrimps, peel off the shell and deveined.
2. Cut straw mushrooms into halves or 4 pieces if they are big ones.
Cooking Instructions:
1. Heat the wok on a medium heat then pour oil into a wok. Add garlic stir-fry until it turns golden brown.
2. Add all shrimps, continue stir-frying for 2 minutes. Then add straw mushrooms.
3. Season with fish sauce, oyster sauce, ground pepper, sugar, and continue stir-frying until cooked.
4. Remove from the heat and put into the plate. Serve with rice.
Tips:
You can use other kind of vegetables instead of straw mushrooms like kale, babycorn, cauliflower, asparagus, peas, broccoli, and cabbage. I like to add slice carrots into all stir fried dishes. It makes the dishes more colorful and tastier.
